Chicken and Portabella Mushrooms

(Total Time: 35 MIN| Serves: 4)

Ingredients:
4 Chicken Thighs
1 pound Portabella Mushrooms, sliced
1 can Coconut Cream
2/3 cup plus 1 tbsp. Water
1 tsp Thyme
1 tsp Parsley
2 tbsp. Arrowroot

Directions:

  1. Whisk together the coconut cream and 2/3 cup water in the IP.
  2. Stir in the thyme and parsley and season with some salt and pepper.
  3. Add the chicken and mushrooms.
  4. Close the lid and cook on HIGH for 10 minutes.
  5. Do a quick pressure release.
  6. Whisk together the arrowroot and water and stir this mixture into the pot.
  7. Cook on SAUTE until thickened.
  8. Serve and enjoy!
