Gingery Lamb with Apples

(Total Time: 50 MIN| Serves: 4)

Ingredients:
1 pound boneless Lamb, cubed
1 Large Apple, sliced
2 tbsp. Coconut Aminos
2 tbsp. Ghee
1 tsp Rosemary
2 tsp minced Garlic
2 tbsp. grated Ginger
1 ½ cups Bone Broth
½ Onion, sliced
1 tbsp. Balsamic Vinegar

Directions:

  1. Melt half of the ghee in your Instant Pot on SAUTE.
  2. Add the lamb in the IP and cook until browned on all sides. Transfer to a plate.
  3. Melt the remaining oil and add the onion.
  4. After 3 minutes of sautéing, add the ginger and garlic and cook for one more minute.
  5. Stir in the vinegar, broth, and coconut aminos.
  6. Add the apples and place the lamb shanks on top.
  7. Close the lid and cook for 10 minutes on HIGH.
  8. Release the pressure naturally.
  9. Serve and enjoy!
