Pumpkin Spice Stew

1.5 cups chicken broth

1 cup diced whole pumpkin

½ cup pumpkin puree

½ cup heavy whipping cream

4 tbsp. butter

1 roughly chopped onion

2 cloves roasted garlic, minced

4 slices cooked bacon

3 tbsp. leftover bacon grease

½ tsp freshly minced ginger

¼ tsp coriander

¼ tsp cinnamon

1/8 tsp nutmeg

1 large bay leaf

salt and pepper


Melt the butter in your Instant Pot.
Add the onion, garlic, and ginger, soften 3 minutes.
Add the spices 1 minute.
Add the remaining ingredients.
Seal and cook on Stew for 15 minutes.
Depressurize quickly and serve.
