Super-Quick Chili

(Total Time: 25 MINS| Serves: 6)

Ingredients:

2 peeled and cubed carrots

1 chopped medium celery root

1 chopped small yellow onion

2 pounds cubed into ½-inch pieces grass-fed chicken breasts

¼ cup fresh lemon juice

1 tbsp. dried basil

1 tbsp. dried oregano

1 tbsp. dried cilantro

1 tbsp. ground cumin

Salt, to taste

1 cup homemade chicken broth

1 cup chopped fresh cilantro

Directions:

In the pot of Instant Pot, add all ingredients except fresh cilantro and stir to combine.
Secure the lid and place the pressure valve to “Seal” position.
Select “Manual” and cook under “High Pressure” for about 10 minutes.
Select the “Cancel” and carefully do a “Natural” release.
Remove the lid and stir in cilantro and serve.
