    Bolognese Soup

    (Total Time: 40 MIN| Serves: 4)

    Ingredients:

    1 pound ground Beef

    14 ounces diced canned Tomatoes

    ¼ cup Tomato Puree

    3 cups Chicken Broth

    ½ tsp Thyme

    ½ tsp Oregano

    1 tbsp. chopped Basil

    2 Garlic Cloves, minced

    2 cups Cauliflower Rice

    ½ tsp Sweetener

    ½ tsp Salt

    ½ tsp Pepper

    1 tbsp. Olive Oil

    Directions:

    Heat the oil in your IP on SAUTE.
    Add onions and cook for 3 minutes.
    Add garlic, oregano, and thyme, and cook for 1 more minute.
    Add the beef and cook until browned.
    Stir in the tomato puree and tomatoes, and cook for 2 more minutes.
    Pour the broth over.
    Add salt, pepper, and sweetener, and close the lid.
    Cook on HIGH for 5 minutes.
    Let the pressure drop for 5 minutes.
    Stir in the cauliflower and cook for 5 more minutes on HIGH.
    Release the pressure naturally.
    Stir in the basil and serve.
