1 tbsp. olive oil
3 slivered garlic cloves
1 pound trimmed and chopped fresh kale
½ cup water
Salt and freshly ground black pepper, to taste
1 tbsp. fresh lemon juice
Place the oil in the Instant Pot and select “Sauté”. Then add the garlic and cook for about 1 minute.
Add the kale and cook for about 1-2 minutes.
Select the “Cancel” and stir in water, salt and black pepper.
Secure the lid and place the pressure valve to “Seal” position.
Select “Manual” and cook under “High Pressure” for about 5 minutes.
Select the “Cancel” and carefully do a Quick release.
Remove the lid and stir in lemon juice.
