Sauteed Vegetables with Tamari

    (Total Time: 15 MIN| Serves: 3)


    1 red bell pepper, sliced

    1 green bell pepper, sliced

    1 small zucchini, cut into cubes

    1 small onion, sliced

    ¼ cup dried porcini mushrooms

    ¼ cup Feta cheese

    ½ cup sour cream

    2 tbsp tamari sauce

    2 tbsp sesame oil


    1 tsp pink Himalayan salt

    ½ tsp dried thyme

    ¼ tsp dried oregano


    Plug in the instant pot and press the ‘’Saute’’ button. Heat up the sesame oil and add zucchini. Sprinkle with some salt and cook for 5-6 minutes, stirring constantly.
    Now add bell peppers and onions. Sprinkle with tamari sauce and give it a good stir. Optionally, drizzle with some rice vinegar.
    Season with some more salt, thyme, and oregano. Continue to cook fro 2-3 minutes and then add Feta cheese and mushrooms. Pour in about three tablespoons of water and cook for 3-4 minutes.
    When done, press the ‘’Cancel’’ button and stir in the sour cream.
    Serve immediately.
