Ingredients:
• 4 egg yolks
• 2 T lemon juice
• 1 ½ sticks of butter, melted.
• Salt and pepper
Directions:
1. Heat water to boil in a saucepan.
2. Separate the eggs. Save the whites for another use.
3. Place the yolks in a heat-resistant bowl, either glass or stainless steel.
4. Carefully melt the butter in a saucepan without burning.
5. Place the bowl with the egg yolks over the simmering water to gently heat the eggs. Make sure the water is not touching the bottom of the bowl. The eggs need to be steamed, not cooked.
6. Add lemon juice to egg yolks.
7. Slowly stream the melted butter into the egg yolks while whisking. Start with a few drops of butter and then add a slow stream. Whisk the eggs the entire time until all the butter is added, and the sauce has thickened.
8. Season to taste with lemon juice, salt, and pepper; you can also add a dash of Tabasco sauce.
9. Serve over poached eggs or cooked vegetables.
