Ingredients:

• 3 tablespoons butter
• 2 tablespoons scallions, sliced thinly
• 4 large organic eggs
• 1 Serrano chili pepper
• ¼ cup heavy cream
• 2 tablespoons cilantro, chopped finely
• 1 small tomato, chopped
• Salt and black pepper, to taste

Directions:

1. Mix cream, eggs, cilantro, salt and black pepper in a bowl.
2. Sauté butter, tomatoes and Serrano pepper. Then add egg mixture and let it cook.
3. Immediately serve it and topped with scallions
