Cauliflower Fritters

(Total Time: 25 MIN| Serves: 12)

Ingredients:
1 Cauliflower Head, chopped
2 Eggs
1 cup shredded Cheddar Cheese
¼ cup grated Parmesan Cheese
1 cup ground Almonds
¼ tsp Pepper
½ tsp Italian Seasoning
½ tsp Garlic Salt
3 tbsp. Olive Oil
1 ½ cups Water

Directions:

  1. Place the cauliflower in a microwave-safe bowl and microwave for 5 minutes.
  2. Drain well and pulse in a food processor until ground.
  3. Add the remaining ingredients (except ¼ cup of cheddar) and mix until well incorporated.
  4. Make 12 patties out of the mixture.
  5. Preheat your Instant Pot to SAUTE and add heat 1 tbsp. of the oil.
  6. Add 4 patties and cook for about 2 minutes per side.
  7. Repeat the process two more times.
  8. Pour the water into the IP and lower the rack.
  9. Arrange the patties in a greased baking dish and top with the remaining cheddar.
  10. Close the lid and cook for 3 minutes on MANUAL.
  11. Release the pressure quickly.
  12. Serve and enjoy!
