Ingredients

  • 1 lb (450 g) mussels, cleaned and debearded
  • 2 cups (475 ml) fish stock
  • 5 garlic cloves, crushed
  • 3 tbsp (45 g / 1.59 oz) butter
  • 2 tbsp (30 ml) fresh lemon juice
  • 1 tsp (5 ml) dried thyme
  • ½ tsp chili flakes
  • 2 tbsp (30 ml) fresh parsley, finely chopped
  • ¼ cup (25 g / 0.88 oz) grated Parmesan cheese, for serving
  • For a classic flavor, substitute 1 cup (240 ml) of the fish stock with 1 cup (240 ml) of dry white wine like Sauvignon Blanc. Add it after the garlic and let it simmer for a minute before adding the stock.
  • No Instant Pot? Make this on the stovetop in a large pot with a tight-fitting lid. Bring the broth to a simmer, add the mussels, cover, and steam for 5-7 minutes, until they have opened.

Method

  1. Directions
  2. Prepare the Mussels: Thoroughly rinse the mussels under cold running water. Scrub the shells to remove any grit and pull off the fibrous beard from each one.
  3. Discard any mussels that are open and don't close when tapped.
  4. Set aside. 2.
  5. Sauté the Aromatics: Set your Instant Pot to the Sauté function.
  6. Add the butter and let it melt, then add the crushed garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it. 3. Build the Broth: Pour in the fish stock and lemon juice, scraping up any flavorful bits from the bottom of the pot.
  7. Stir in the dried thyme, chili flakes, and fresh parsley. 4. Steam the Mussels: Place the cleaned mussels into a steamer basket and lower it into the Instant Pot. Secure the lid and turn the steam release handle to the Sealing position. 5. Pressure Cook: Select the Manual or Pressure Cook button and set the timer to 5 minutes on high pressure. 6. Release and Serve: Once the timer finishes, perform a quick release by carefully turning the steam release handle to Venting.
  8. Once the pin drops, open the lid.
  9. Discard any mussels that have not opened. Carefully lift the steamer basket out, ladle the mussels into serving bowls, pour the delicious broth over them, and sprinkle with grated Parmesan cheese.
  10. Serve immediately.
  11. Before cooking, tap any open mussels on the counter. If they don't close within a minute, they are not fresh and should be discarded.
  12. Don't skip the crusty bread! It's essential for sopping up every last drop of the incredible garlic-butter broth.
