    Heavenly Lemon Quads with Coconut Cream

    Ingredients

    Base

    • 3/4 cup coconut flakes
    • 2 Tbsp. coconut oil
    • 1 tablespoon ground almonds

    Cream

    • 5 eggs
    • 1/2 lemon juice
    • 1 tablespoon coconut flour
    • 1/2 cup Stevia sweetener

    Preparation

    Base
    1. Preheat the oven to 360F.

    2. In a bowl, put all the base ingredients and, with clean hands, mix everything well until soft.

    3. With coconut oil, grease a rectangle oven dish. Pour the dough into a baking pan. Bake for 15 minutes until golden brown. Set aside to cool.

    Cream
    1. In a bowl or blender, whisk together the eggs, lemon juice, coconut flour and sweetener. Pour over the baked cake evenly.

    2. Put pan in the oven and bake 20 minutes more.

    3. When ready, refrigerate for at least 6 hours. Cut in cubes and serve.
