• 2 tbsp Dijon mustard

• 3 tbsp butter, melted
• 1 tbsp dried rosemary
• 2 tsp garlic powder
• 2 tsp smoked paprika
• ½ tsp dried thyme
• 2 tsp salt
• 1 tsp freshly ground white pepper
• 1 cup / 240ml water, for the Instant Pot

Instructions

1. In a medium-sized bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, lemon slices, and all spices (rosemary through white pepper) to create the marinade.
2. Add the pork pieces to the bowl, turning to coat each one thoroughly. Transfer the pork and all the marinade to a large resealable bag and refrigerate overnight, or for at least 4 hours.
3. About 30 minutes before cooking, remove the pork from the refrigerator to allow it to come to room temperature.
4. Pour 1 cup of water into the stainless steel insert of your Instant Pot and place the trivet at the bottom.
