The Best Guilt-Free Candied Pecans

A visit to my in-laws’ in West Tennessee always meant coming home with bags of fresh pecans from their trees. I used to turn them into classic sugared pecans, but I’ve since created a version that’s even more delicious—and completely sugar-free! These Keto Candied Pecans have that same irresistible sweet, buttery crunch, with a hint of vanilla and a sprinkle of sea salt to satisfy every sweet and salty craving. Ingredients

• 2 cups / 200g raw pecan halves
• ½ cup / 90g packed brown sugar substitute
• 2 tablespoons / 30ml heavy whipping cream
• ¼ teaspoon / 1.25ml vanilla extract
• Medium-grind sea salt, for sprinkling (optional)

Instructions

1. Preheat your oven to 350°F / 175°C and line a large baking sheet with parchment paper.
2. In a medium bowl, combine the pecan halves, brown sugar substitute, heavy whipping cream, and vanilla extract. Stir until the pecans are fully and evenly coated.
3. Spread the coated pecans in a single, even layer on the prepared baking sheet.
4. Bake for 10 minutes, then remove the pan from the oven and stir the pecans. Spread them back into an even layer.
5. Return the pan to the oven and bake for another 8-10 minutes, or until the coating is bubbly and the pecans are a deep golden brown.
