Pork Chops with Cheese and Prosciutto

(Total Time: 55 MIN| Serves: 5)

Ingredients:

5 pork chops, boneless

½ cup cottage cheese

3 oz prosciutto

2 tbsp balsamic vinegar

1 onion, finely chopped

2 garlic cloves, crushed

4 tbsp olive oil

½ cup diced canned tomatoes, sugar-free

Spices:

1 tsp salt

½ tsp black pepper, freshly ground

1 tsp dried basil

Directions:

Rinse well the meat and pat dry with a kitchen towel. Place on a cutting board and remove the bones. Rub well with some olive oil, salt, pepper, and basil. Let it sit for 15 minutes.
Plug in the instant pot and position a trivet at the bottom of the inner pot. Pour in one cup of water and set aside.
Transfer the meat into a small baking pan. Drizzle with some more olive oil and add cheese and prosciutto. Loosely cover with aluminum foil and place in the pot.
Press the ‘’Manual’’ button and set the steam release handle. Set the timer for 20 minutes on high pressure.
When done, perform a quick pressure release and open the lid. Remove the pan and set aside.
Now press the ‘’Saute’’ button and grease the inner pot with some oil. Add onions and cook until translucent. Pour in tomatoes and cook for 10-12 minutes, stirring occasionally. Optionally, season with some more salt or dried basil.
Remove from the pot and drizzle over meat. Serve immediately.
