Coconut Chicken Fingers
Tasty tender tropical goodness!
Ingredients
● 1 egg, medium
● 1 pound of boneless, skinless chicken tenders
● ⅛ tsp of cinnamon
● 1 cup unsweetened shredded coconut
● ½ cup cashew flour
● ¼ tsp garlic powder
● ¼ tsp salt
● ¼ tsp pepper
Instructions
● Preheat oven to 375 °F.
● Line a baking sheet with parchment paper.
● Beat the egg in a bowl and set aside.
● In another bowl, mix the shredded coconut, cinnamon, cashew flour, garlic powder, salt, and pepper.
● Dip the chicken tenders in the egg then dredge in the flour mixture.
● Arrange the tenders on the baking sheet, spaced evenly.
● Bake for 15 to 20 minutes.
● Serve
