Ingredients
• 3 medium zucchini
• 1 cup / 225g soft goat cheese, softened
• ½ cup / 90g drained sun-dried tomatoes, finely chopped
• ½ cup / 20g fresh basil leaves
• 4 tbsp / 60ml raspberry vinegar
• Salt and freshly ground black pepper to taste
Instructions
1. Using a mandoline or a sharp vegetable peeler, slice the zucchini lengthwise into long, thin, pliable ribbons, about 1/8-inch thick.
2. Place the zucchini ribbons in a shallow dish and drizzle with the raspberry vinegar. Gently toss to coat, then let them marinate for at least 10 minutes to soften.
3. Remove the zucchini ribbons from the marinade and pat them dry with a paper towel. Lay them flat on a clean work surface.
4. Spread a thin layer of softened goat cheese over each zucchini ribbon.
5. At one end of each strip, place a small amount of chopped sun-dried tomatoes and a fresh basil leaf.
6. Tightly roll up each zucchini strip from the filled end to the other. Secure each roll with a toothpick and arrange on a platter to serve.
