Linzer Cookies

Cookies make for a great munching snack, and this low-carb, vegetarian option is healthy too!

Ingredients

For the cookies

•    3 ounces of buttery spread, soft

•    2 tbsp of erythritol

•    1 tbsp almond extract

•    6 tbsp coconut flour

•    2 tbsp of cream cheese, soft

For the filling

•    ¼ cup of sugar-free raspberry jam

Instructions

•    Preheat the oven to 350 °F.

•    Mix together the butter, cream cheese, almond extract, and sweetener.

•    Now, thoroughly mix in the coconut flour. Knead it for some time

•    Now roll out the dough until it is about 5 mm thick.

•    Now, using a cookie cutter, cut 10 “bottom” pieces and 10 “top” pieces.

•    Place on cookie sheet, and bake for about 10 minutes.

•    Remove from the oven and let cool for about 30 minutes.

•    Spread 1 tsp of the jam on a “bottom” cookie, and then top with a “top” cookie. Repeat until all cookies are used.

•    Serve.
