Paleo Burrito Bowl Recipe
This is an amazingly healthy choice for lunch and takes less than 20 minutes to prep.
Ingredients
● 1 large chopped onion
● 4 chopped roma tomatoes
● 1 cup of sliced black olives
● 2 cups of leftover taco spiced beef (~ 15.8 oz)
● 1 sliced ripe avocado
● 2 tbsp of coconut oil
● 3 cups of riced cauliflower
● 5 cups of shredded lettuce
● 1 cup of salsa
● diced cilantro
Instructions
● In a pan, sauté olives, onion, and cauliflower in the coconut oil.
● Add the taco meat along with the tomatoes. Cook until evenly hot.
● Serve along with shredded lettuce. Top with salsa, diced cilantro, and avocado.
