    Paleo Stuffed Avocado

    Tasty, creamy, and chock full of healthy fats, avocados are virtually the poster food for keto.

    Ingredients

    ●    1 large avocado

    ●    1 medium spring onion

    ●    1 tin of drained sardines (3.75 oz)

    ●    1 tbsp of fresh lemon juice

    ●    1 tbsp of mayonnaise

    ●    ¼ tsp of salt

    ●    ¼ tsp of turmeric powder, freshly ground

    Instructions

    ●    Halve and pit avocado.

    ●    Drain the sardines and place in mixing bowl.

    ●    Break them into smaller pieces.

    ●    Scoop out the middle portion of the avocado halves, leaving ½ to 1 inch of flesh.

    ●    Slice the spring onion evenly and add to the sardines.

    ●    Add freshly ground turmeric.

    ●    Add mayonnaise and mix it thoroughly.

    ●    Add the scooped avocado flesh and mash thoroughly.

    ●    Squeeze the lemon juice into the bowl.

    ●    Add salt and mash to distribute evenly.

    ●    Scoop the mixture into the avocado halves and serve.
