Bacon Brussels Sprouts

1 cup Brussels sprouts, chopped
3 oz bacon, cut into bite-sized pieces
4 large eggs, beaten
1 tbsp green onions, finely chopped
1 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp garlic powder
½ tsp smoked paprika, ground
1 tsp sea salt
- Plug in your instant pot and grease the stainless steel insert with olive oil. Press the “Sauté” button and add Brussels sprouts. Sprinkle with garlic powder, paprika and salt. Stir well and cook for 5 minutes.
- Now, add beaten eggs, onions, and balsamic vinegar. Give it a good stir and cook for 2-3 more minutes. Turn off the pot and stir in the bacon immediately. Let it stand for 10 minutes before serving.
