1 lb. chicken breast, boneless and skinless
1 large tomato, pureed
1 large onion, finely chopped
2 cups chicken stock
1 tsp salt
½ tsp black pepper
1 tsp dried oregano
- Rinse the meat under cold running water and pat dry with a kitchen towel cut into bite-sized pieces and set aside.
- Wash the tomato and place in the food processor. Add oregano, salt, and pepper. Process until pureed and set aside.
- Plug in your instant pot and combine all ingredients in the stainless steel insert. Close the lid and adjust the steam release handle. Press the ‘Manual’ mode and set the timer for 30 minutes.
