Cheesy Tomato Frittata

4 large tomatoes, peeled and roughly chopped
1 cup cottage cheese
3 large eggs
3 tbsp olive oil
¼ tsp stevia powder
2 tsp Italian seasoning mix
¼ cup fresh parsley, finely chopped
½ tsp salt
- Plug in the instant pot and grease the inner pot with oil. Press the ‘’Sauté’’ button and add tomatoes, stevia, Italian seasoning, parsley, and salt.
- Give it a good stir and cook for 15 minutes or until tomatoes soften. Stir occasionally.
- Meanwhile, whisk together eggs and cottage cheese. Optionally, add some more salt.
- Pour the mixture into the pot and give it a good stir.
- Cook for 3 more minutes.
- Serve warm.
