Cottage Cheese and Pine Nut Egg Pie

(Total Time: 40 MIN| Serves: 6)

Ingredients:
6 Eggs, beaten
2 tbsp. chopped Pine Nuts
1 Tomato, diced
¼ cup Heavy Cream
2 tbsp. chopped Basil
¼ cup grated Parmesan Cheese
1 cup Cottage Cheese
Pinch of Salt
Pinch of Pepper
1 ½ cups Water

Directions:

  1. Pour the water into the Instant Pot and lower the trivet.
  2. Combine all of the ingredients in a large bowl.
  3. Grease a baking dish and pour the mixture inside.
  4. Place the dish inside the IP and close the lid.
  5. Cook for 30 minutes on MANUAL.
  6. Release the pressure quickly.
  7. Serve and enjoy!
