    Diet meal plan to lose weight

    Curried Chicken with Tomatoes, Spinach and Yogurt

    (Total Time: 60 MIN| Serves: 8)

    Ingredients:
    1 ½ cups Yogurt
    4 pounds Chicken, cubed
    2 Tomatoes, chopped
    4 ounces Spinach
    1/3 pound Curry Paste
    1 tbsp. Olive Oil
    1 Onion, sliced
    1 tbsp. chopped Coriander

    Directions:

    1. Combine the chicken, curry paste, and yogurt, in a bowl.
    2. Cover, and let marinate in the fridge for 30 minutes.
    3. Heat the oil in the IP on SAUTE.
    4. Cook the onions until soft.
    5. Add tomatoes and cook for another minute.
    6. Pour the chicken mixture over.
    7. Stir in spinach and coriander.
    8. Lock the lid and cook on HIGH for 15 minutes.
    9. Do a quick pressure release.
    10. Serve and enjoy!
