Curried Chicken with Tomatoes, Spinach and Yogurt
(Total Time: 60 MIN| Serves: 8)
Ingredients:
1 ½ cups Yogurt
4 pounds Chicken, cubed
2 Tomatoes, chopped
4 ounces Spinach
1/3 pound Curry Paste
1 tbsp. Olive Oil
1 Onion, sliced
1 tbsp. chopped Coriander
Directions:
- Combine the chicken, curry paste, and yogurt, in a bowl.
- Cover, and let marinate in the fridge for 30 minutes.
- Heat the oil in the IP on SAUTE.
- Cook the onions until soft.
- Add tomatoes and cook for another minute.
- Pour the chicken mixture over.
- Stir in spinach and coriander.
- Lock the lid and cook on HIGH for 15 minutes.
- Do a quick pressure release.
- Serve and enjoy!
