Kale Cheddar Cheese Omelet

(Total Time: 10 MIN| Serves: 2)

For omelet:
6 large eggs
½ cup cheddar cheese, crumbled
1 small onion, finely chopped
2 tbsp heavy cream

½ tsp Italian seasoning
1 tsp sea salt
½ tsp black pepper, freshly ground


  1. In a large mixing bowl, combine eggs, salt, pepper, and heavy cream. Whisk together until well combined and then add all the remaining ingredients. Whisk again and set aside.
  2. Plug in the instant pot and grease the stainless steel insert with some cooking spray or olive oil.
  3. Pour in the egg mixture ad press the ‘’Manual’’ button. Set the steam release handle to the ‘’Sealing’’ position and set the timer for 5 minutes on high pressure.
  4. When done, perform a quick pressure release by moving the pressure valve to the ‘’Venting’’ position. Carefully open the lid and serve immediately.
