Kale Cheddar Cheese Omelet

6 large eggs
½ cup cheddar cheese, crumbled
1 small onion, finely chopped
2 tbsp heavy cream
½ tsp Italian seasoning
1 tsp sea salt
½ tsp black pepper, freshly ground
- In a large mixing bowl, combine eggs, salt, pepper, and heavy cream. Whisk together until well combined and then add all the remaining ingredients. Whisk again and set aside.
- Plug in the instant pot and grease the stainless steel insert with some cooking spray or olive oil.
- Pour in the egg mixture ad press the ‘’Manual’’ button. Set the steam release handle to the ‘’Sealing’’ position and set the timer for 5 minutes on high pressure.
- When done, perform a quick pressure release by moving the pressure valve to the ‘’Venting’’ position. Carefully open the lid and serve immediately.
