Glazed Duck Breast

1 lb. duck breast, chopped into bite-sized pieces
1 tbsp. olive oil
3 cups chicken broth
1 tbsp. Dijon mustard
1 tsp honey
¼ cup apple cider vinegar
1 tsp salt
½ tsp pepper
1 tsp garlic powder
- Remove the meat from the refrigerator about one hour before cooking.
- Rub the meat with onion powder and place in your instant pot along with the chicken broth. Seal the lid and press the ‘Meat’ button. When you hear the cooker’s end signal, perform a quick release and open the lid. Remove the meat from the pot along with the broth.
- Press the ‘Sauté’ button and grease the stainless steel insert with oil. Add apple cider, Dijon, and honey. Sprinkle with salt and pepper and cook for 3-4 minutes.
- Add the meat and coat well. Serve immediately.
