No-Crust Tomato & Spinach Quiche

(Total Time: 35 MIN| Serves: 6)

Ingredients:
1 cup diced Tomatoes
3 cups chopped Spinach
¼ cup grated Parmesan Cheese
½ cup Milk
3 Green Onions, chopped
12 Eggs
½ Tomato, sliced
½ tsp Garlic Salt
¼ tsp Pepper
1 ½ cups Water

Directions:

  1. Pour the water into the Instant Pot.
  2. Grease a baking dish with cooking spray.
  3. Combine the diced tomatoes, green onions, and spinach, in it.
  4. Beat the eggs along with the milk, salt, and pepper.
  5. Pour this mixture over the spinach and tomatoes.
  6. Sprinkle with parmesan cheese and top with tomato slices.
  7. Place the baking dish on the rack and close the lid.
  8. Cook on HIGH for 20 minutes.
  9. Wait 10 minutes before releasing the pressure quickly.
  10. Serve and enjoy!
