Shrimp Scampi

(Total Time: 15 MIN| Serves: 4)

Ingredients:
1 ½ pounds Shrimp, peeled and deveined
2 tbsp. Coconut Oil
Juice of 1 Lemon
¾ cup Chicken Broth
2 tsp minced Garlic
3 tbsp. chopped Parsley

Directions:

  1. Melt the coconut oil in your Instant Pot on SAUTE.
  2. Add the garlic and cook for one minute.
  3. Add broth and shrimp and close the lid.
  4. Cook on HIGH for 2 minutes.
  5. Do a quick pressure release.
  6. Transfer to a plate.
  7. Stir in parsley and lemon juice.
  8. Serve and enjoy!
