Italian Lamb Shanks

Ingredients:
4 lamb shanks
8 oz button mushrooms, sliced
3 cups beef broth
3 tbsp olive oil
¼ cup apple cider vinegar
1 large onion, finely chopped
2 garlic cloves
2 celery stalks, chopped
¼ cup leeks, chopped
1 large tomato, roughly chopped

Spices:
2 tsp sea salt
1 tsp dried rosemary

Directions:

  1. Combine the ingredients in the pot and stir well. Seal the lid and set the steam release handle to the ‘’Sealing’’ position.
  2. Press the ‘’Manual’’ button and set the timer for 25 minutes on high pressure.
  3. When done, release the pressure naturally and open the lid.
  4. Serve immediately.
  5. Optionally, sprinkle with some Parmesan before serving.
