Italian Lamb Shanks

4 lamb shanks
8 oz button mushrooms, sliced
3 cups beef broth
3 tbsp olive oil
¼ cup apple cider vinegar
1 large onion, finely chopped
2 garlic cloves
2 celery stalks, chopped
¼ cup leeks, chopped
1 large tomato, roughly chopped
2 tsp sea salt
1 tsp dried rosemary
- Combine the ingredients in the pot and stir well. Seal the lid and set the steam release handle to the ‘’Sealing’’ position.
- Press the ‘’Manual’’ button and set the timer for 25 minutes on high pressure.
- When done, release the pressure naturally and open the lid.
- Serve immediately.
- Optionally, sprinkle with some Parmesan before serving.
