Poached Eggs with Tomatoes

1 Tomato, chopped
½ Red Onion, diced
½ tsp Salt
¼ tsp Pepper
½ tsp Paprika
½ tsp dried Parsley
- Grease 4 ramekins with cooking spray.
- Beat the eggs along with the salt, pepper, paprika, and parsley.
- Stir in the tomatoes and red onion
- Divide this mixture between the ramekins.
- Pour 1 ½ cups water into your Instant Pot and lower the trivet.
- Place the ramekins inside and close the lid.
- Cook on STEAM for 5 minutes.
- Release the pressure quickly.
- Serve and enjoy!
