    Lamb Neck with Broccoli

    (Total Time: 25 MIN| Serves: 4)

    Ingredients:
    1 lb lamb neck, chopped
    1 lb broccoli, chopped
    1 cup cauliflower, chopped into florets
    2 small onions, finely chopped
    1 large tomato, roughly chopped
    2 tbsp olive oil
    2 celery stalks, finely chopped
    ½ small sweet potato, finely chopped

    Spices:
    2 tsp salt
    1 tbsp cayenne pepper
    ½ tsp black pepper, freshly ground

    Directions:

    1. Rinse the meat and chop into bite-sized pieces. Place at the bottom of your pot and add vegetables.
    2. Sprinkle with olive oil, salt, cayenne pepper, and black pepper. Pour in the stock and seal the lid.
    3. Set the steam release handle to the ‘’Sealing’’ position. Press the ‘’Manual’’ button and set the timer for 17 minutes on high pressure.
    4. When done, release the pressure naturally and open the lid. Give it a good stir and serve immediately.
