Lamb Neck with Broccoli

1 lb lamb neck, chopped
1 lb broccoli, chopped
1 cup cauliflower, chopped into florets
2 small onions, finely chopped
1 large tomato, roughly chopped
2 tbsp olive oil
2 celery stalks, finely chopped
½ small sweet potato, finely chopped
2 tsp salt
1 tbsp cayenne pepper
½ tsp black pepper, freshly ground
- Rinse the meat and chop into bite-sized pieces. Place at the bottom of your pot and add vegetables.
- Sprinkle with olive oil, salt, cayenne pepper, and black pepper. Pour in the stock and seal the lid.
- Set the steam release handle to the ‘’Sealing’’ position. Press the ‘’Manual’’ button and set the timer for 17 minutes on high pressure.
- When done, release the pressure naturally and open the lid. Give it a good stir and serve immediately.
