Lime and Salsa Chicken with Cauliflower Rice

Ingredients:
2 Chicken Breasts
¼ cup Lime Juice
½ cup Mexican Cheese Blend
½ tsp Garlic Powder
3 tbsp. Olive Oil
½ cup Tomato Sauce
½ cup Salsa
2 cups riced Cauliflower
Salt and Pepper, to taste
Directions:
- Combine all of the ingredients, except the cauliflower and cheese, in your IP.
- Close the lid and set the MANUAL cooking mode.
- Cook on HIGH for 12 minutes.
- Do a quick pressure release and add stir in the rice and cheese.
- Cook for 5 more minutes.
- Do a quick pressure release.
- Serve and enjoy!
