Lime and Salsa Chicken with Cauliflower Rice

(Total Time: 35 MIN| Serves: 4)

Ingredients:
2 Chicken Breasts
¼ cup Lime Juice
½ cup Mexican Cheese Blend
½ tsp Garlic Powder
3 tbsp. Olive Oil
½ cup Tomato Sauce
½ cup Salsa
2 cups riced Cauliflower
Salt and Pepper, to taste

Directions:

  1. Combine all of the ingredients, except the cauliflower and cheese, in your IP.
  2. Close the lid and set the MANUAL cooking mode.
  3. Cook on HIGH for 12 minutes.
  4. Do a quick pressure release and add stir in the rice and cheese.
  5. Cook for 5 more minutes.
  6. Do a quick pressure release.
  7. Serve and enjoy!
