Scrambled Eggs with Tomato and Green Onions

3 large eggs
½ cup cottage cheese
1 cup button mushrooms, sliced
½ tomato, finely chopped
2 spring onions, chopped
¼ cup milk
2 tbsp olive oil
½ tsp salt
- Grease the bottom of your instant pot with oil and press the ‘’Steam’’ button. Add onions and cook for 3 minutes.
- Now add tomatoes and mushrooms. Continue to cook until all the liquid evaporates, for 5-6 minutes.
- Meanwhile, whisk the eggs, cottage cheese, and milk. Season with salt and optionally some freshly ground black pepper.
- Pour the mixture into the pot and give it a good stir. Cook for 2 minutes.
- Serve warm.
