Ingredients

• 1 cup / 240 ml heavy cream
• 1 tsp / 3 g unflavored gelatin powder
• 2 tbsp cold water
• 1 vanilla pod, split and scraped, or 1 tsp pure vanilla extract
• 2-3 tbsp powdered erythritol or preferred sweetener, to taste

Instructions

1. In a small bowl, sprinkle the gelatin over the cold water and set aside for 5-10 minutes to bloom.
2. Pour the heavy cream into a small saucepan. If using a vanilla pod, split it lengthwise, scrape out the seeds with the tip of a knife, and add both the seeds and the pod to the cream.
3. Place the saucepan over low-medium heat. Add your sweetener and stir gently until it completely dissolves. Heat the cream until it just begins to simmer around the edges—do not let it boil.
4. Remove the saucepan from the heat. If you used a vanilla pod, remove and discard it now. If using vanilla extract, stir it in at this point.
5. Add the bloomed gelatin to the hot cream and whisk continuously until the gelatin is completely dissolved and the mixture is smooth.
6. Carefully pour the mixture into two ramekins or molds. Let them cool slightly at room temperature before transferring to the refrigerator.
7. Chill for at least 4 hours, or until fully set.
8. To serve, you can dip the bottom of each mold in hot water for a few seconds, then invert onto a plate. Garnish with fresh berries and enjoy!
