    Roast Goose

    (Total Time: 40 MIN| Serves: 5)

    Ingredients:
    2 lbs. goose fillets, sliced into one-inch thick slices
    1 cup onions, finely chopped
    4 tbsp. butter
    2 garlic cloves, crushed
    2 cups chicken stock

    Spices:
    2 bay leaves
    1 tsp dried thyme
    1 tsp sea salt
    ¼ tsp white pepper

    Directions:

    1. Rinse the meat under cold running water and generously sprinkle with salt and white pepper. Place at the bottom of your instant pot and add bay leaves, and dried thyme. Pour in two cups of water and seal the lid. Set the steam release handle and press the ‘Meat’ button.
    2. When you hear the cooker’s end signal, perform a quick release and open the lid. Remove the meat from the pot along with the liquid.
    3. Add butter and press the ‘Sauté’ button. Allow it to melt and add onions and garlic. Stir-fry for 3-4 minutes. Add fillets, one at the time and brown on both sides for 2 minutes.
    4. Remove from the pot and serve.
