Spinach Bacon Frittata

6 oz fresh spinach, finely chopped
2 oz bacon, cut into bite-sized pieces
6 large eggs, beaten
3 oz cottage cheese, crumbled
1 oz ricotta cheese
2 tbsp extra virgin olive oil
½ tsp garlic powder
½ tsp onion powder
1 tsp salt
1 tsp black pepper, ground
- Rinse the spinach thoroughly under cold running water. Drain well and finely chop. Set aside.
- In a large mixing bowl, combine eggs, garlic powder, onion powder, salt, and pepper. With a whisking attachment, beat until foamy. Add cottage cheese and ricotta cheese and beat again until combined. Now, stir in the spinach and bacon. Set aside.
- Plug in your instant pot and grease the stainless steel insert with olive oil. Press the SAUTE button and pour in the previously prepared mixture. Cook for 4-5 minutes, or until eggs are set.
- Turn off the pot and transfer the frittata to serving plate. Sprinkle with some finely chopped chives and serve immediately.
