Spinach Bacon Frittata

Ingredients:
6 oz fresh spinach, finely chopped
2 oz bacon, cut into bite-sized pieces
6 large eggs, beaten
3 oz cottage cheese, crumbled
1 oz ricotta cheese
2 tbsp extra virgin olive oil

Spices:
½ tsp garlic powder
½ tsp onion powder
1 tsp salt
1 tsp black pepper, ground

Directions:

  1. Rinse the spinach thoroughly under cold running water. Drain well and finely chop. Set aside.
  2. In a large mixing bowl, combine eggs, garlic powder, onion powder, salt, and pepper. With a whisking attachment, beat until foamy. Add cottage cheese and ricotta cheese and beat again until combined. Now, stir in the spinach and bacon. Set aside.
  3. Plug in your instant pot and grease the stainless steel insert with olive oil. Press the SAUTE button and pour in the previously prepared mixture. Cook for 4-5 minutes, or until eggs are set.
  4. Turn off the pot and transfer the frittata to serving plate. Sprinkle with some finely chopped chives and serve immediately.
