Soft and Juicy Chicken

1 3-4 pound Chicken
1 tbsp. Coconut Oil
2 tbsp. Lemon Juice
2 Garlic Cloves, peeled
1 tsp Paprika
1 ½ cups Chicken Stock
½ tsp Salt
¼ tsp Pepper
1 tsp Onion Powder


  1. Combine all of the spices in a small bowl.
  2. Rub the mixture into the chicken.
  3. Melt the coconut oil in your IP on SAUTE.
  4. Add the chicken and cook until browned on all sides.
  5. Pour the stock and lemon juice over.
  6. Add the garlic cloves.
  7. Close and cook on MANUAL for 25 minutes.
  8. Let the pressure drop naturally.
  9. Serve and enjoy!
