Worcestershire Belizean Chicken

Ingredients:
4 Whole Chicken Legs
2 tbsp. White Vinegar
1 tbsp. Coconut Oil
3 tbsp. Worcestershire Sauce
2 tsp minced Garlic
1 tsp Cumin
2 tbsp. Recado Rojo
1 cup sliced Onions
1 tbsp. Sweetener
2 cups Chicken Broth
1 tsp Oregano
½ tsp Pepper
Directions:
- In a bowl, whisk together the Worcestershire, recado rojo, vinegar, pepper, oregano, sweetener, and cumin.
- Add the chicken legs, and rub to coat them well.
- Cover the bowl and let marinate in the fridge for 60 minutes.
- Melt the coconut oil in your IP on SAUTE.
- Add onions and cook for 2 minutes
- Stir in the garlic and sauté for another minute.
- Add chicken and cook until browned on all sides.
- Stir in the remaining ingredients and close the lid.
- Cook on HIGH for 20 minutes.
- Release the pressure and serve.
