Worcestershire Belizean Chicken

Ingredients:
4 Whole Chicken Legs
2 tbsp. White Vinegar
1 tbsp. Coconut Oil
3 tbsp. Worcestershire Sauce
2 tsp minced Garlic
1 tsp Cumin
2 tbsp. Recado Rojo
1 cup sliced Onions
1 tbsp. Sweetener
2 cups Chicken Broth
1 tsp Oregano
½ tsp Pepper

Directions:

  1. In a bowl, whisk together the Worcestershire, recado rojo, vinegar, pepper, oregano, sweetener, and cumin.
  2. Add the chicken legs, and rub to coat them well.
  3. Cover the bowl and let marinate in the fridge for 60 minutes.
  4. Melt the coconut oil in your IP on SAUTE.
  5. Add onions and cook for 2 minutes
  6. Stir in the garlic and sauté for another minute.
  7. Add chicken and cook until browned on all sides.
  8. Stir in the remaining ingredients and close the lid.
  9. Cook on HIGH for 20 minutes.
  10. Release the pressure and serve.
  11. Enjoy!
