1 lb pork fillet, central cut
3 tbsp butter
2 small onions, finely chopped
3 bacon slices, chopped
2 oz prosciutto
1 green bell pepper, finely chopped
1 pickle, sliced
2 boiled eggs
1 small chili pepper
2 tbsp balsamic vinegar
¼ cup fresh parsley, finely chopped
1 tsp smoked pepper
Plug in the instant pot and press the ‘’Saute’’ button. Heat the butter and add onions, bacon, prosciutto, bell pepper, and chili pepper.
Cook for 3-4 minutes, stirring constantly and then add pickle and season with smoked pepper. Drizzle with balsamic vinegar and continue to cook for one minute.
Now add the fillets and pour in ½ cup of water. Simmer for 10-15 minutes, turning a couple of times.
When done, press the ‘’Cancel’’ button. Transfer the fillets to serving plates and top with sliced eggs. Serve with the sauce from the pot.
