Button Mushroom and Pepper Pork
(Total Time: 40 MIN| Serves: 4)
1 lb pork loin, cut into bite-sized pieces
2 red bell peppers, sliced
1 cup button mushrooms, sliced
1 garlic clove, crushed
½ cup sun-dried tomatoes
3 tbsp olive oil
2 cups beef broth
½ tsp salt
½ tsp dried oregano
¼ tsp black pepper, freshly ground
Rinse the meat and place on a cutting board. Chop into bite-sized pieces and set aside.
Plug in the instant pot and press the ‘’Saute’’ button. Grease the inner pot with oil and heat up. Add peppers and garlic. Cook for 4-5 minutes and then add the pork.
Brown on all sides for a couple of minutes, stirring constantly.
Now season with salt, pepper, and oregano. Add mushrooms, tomatoes, and pour in the broth. Stir well and seal the lid.
Set the steam release handle to the ‘’Sealing’’ position and press the ‘’Manual’’ button.
Set the timer for 15 minutes on high pressure.
When done, release the pressure naturally for 15-20 minutes before serving.
