Fragrant Lamb Riblets
(Total Time: 45 MIN| Serves: 4)
4 slabs of lamb riblets, about 2 lbs
5 cups beef broth
1 tbsp lemon juice
4 tbsp ghee
3 garlic cloves, crushed
¼ cup fresh coriander, chopped
2 cloves, whole
1 tsp salt
2 tsp chili powder
Rinse well the meat and place in the pot. season with salt and chili pepper and pour in the broth.
Add lemon juice and cloves. Seal the lid and set the steam release handle to the ‘’Sealing’’ position.
Press the ‘’Manual’’ button and cook for 40 minutes on high pressure. Optionally, slow cook for 6-8 hours.
When done, release the pressure naturally and open the lid. Remove the cloves and stir in ghee. Sprinkle with coriander and serve immediately with some cauliflower puree or fresh vegetable salad.
