Heavy Mushroom Pork
(Total Time: 40 MIN| Serves: 4)
Ingredients:
1 lb pork fillet, sliced into half-inch thick slices
3 tbsp oil
1 cup mushrooms, sliced
3 tbsp balsamic vinegar
1 small chili pepper, chopped
1 cup tomato sauce, sugar-free
2 garlic cloves, crushed
1 small onion, finely chopped
Spices:
½ tsp salt
¼ tsp black pepper, freshly ground
2 tsp dried celery
½ tsp red pepper flakes
1 tsp smoked paprika
Directions:
Remove the fillets from the fridge about 20 minutes before cooking. Sprinkle with salt and pepper and set aside.
Plug in the instant pot and heat up the oil. Add fillets and briefly brown on both sides, for 2-3 minutes.
Remove from the pot and set aside.
Now add onions and mushrooms. Sprinkle with salt, pepper, and celery. Cook for 5-6 minutes and then add balsamic vinegar, chili, tomato, and garlic. Sprinkle with red pepper flakes and smoked paprika. Continue to cook for 1-2 minutes and add the meat.
Coat the meat with the sauce and continue to cook for another 10-12 minutes.
When done, press the ‘’Cancel’’ button and remove form the pot. Optionally, sprinkle with some grated Parmesan cheese and serve immediately.
