Pork Cutlets with Avocado Sauce
(Total Time: 25 MIN| Serves: 4)
Ingredients:
4 pork cutlets, boneless
3 tbsp butter
1 cup beef broth
1 tsp salt
For the sauce:
1 cup onions, finely chopped
1 avocado, chopped into chunks
2 garlic cloves, crushed
½ tsp cayenne pepper
1 tsp fresh basil, finely chopped
2 tbsp olive oil
1 tbsp lemon juice
¼ cup heavy cream
Directions:
Plug in the instant pot and grease the inner pot with butter. Heat up and add cutlets. Brown for 2-3 minutes on both sides and then start adding broth, two tablespoons at the time. Simmer for 10-12 minutes or until you have used all the broth.
Remove the cutlets from the pot and set aside.
Now add onions to the same pot and stir fry for a couple of minutes. Then add avocado and about ¼ cup of water. Simmer until completely tender and then add garlic, olive oil, cayenne pepper, basil, and lemon juice. Give it a good stir and remove from the pot.
Transfer the sauce to a food processor and add heavy cream. Process until smooth.
Drizzle over cutlets and serve.
