Pork Keto Risotto with Eggs

(Total Time: 45 MIN| Serves: 4)

Ingredients:

1 cup cauliflower, finely chopped

10 oz pork neck, chopped into bite-sized pieces

2 eggs

1 large onion, finely chopped

1 small zucchini, sliced

1 green chili pepper, finely chopped

4 tbsp olive oil

4 tbsp soy sauce

Spices:

1 tsp salt

1 tsp dried marjoram

½ tsp black pepper, freshly ground

Directions:

Place the meat in a deep bowl and season with salt, pepper, and marjoram. Drizzle with some olive oil and place in the pot.
Press the ‘’Saute’’ button and cook for 5-6 minutes, stirring constantly. Now add onions, zucchini, and pepper. Continue to cook for another 5-6 minutes.
Press the ‘’Cancel’’ button and pour in 1 cup of water. Seal the lid and set the steam release handle. Cook for 7 minutes on the ‘’Manual’’ mode.
When done, perform a quick pressure release and open the lid. Add cauliflower and seal the lid again.
Set the timer for 3 minutes on high pressure. When you hear the end signal, perform a quick pressure release and open the lid.
Stir in the soy sauce and crack eggs. Give it a good stir and cover with the lid. Let it sit for a while before serving.
