Pork Leg Roast

Ingredients:
3 lbs pork leg
2 spring onions, finely chopped
3 tbsp soy sauce
2 tbsp mustard
4 tbsp olive oil
Spices:
2 bay leaves
1 tsp white peppercorn
1 tsp coriander seeds
½ tsp dried sage
½ tsp dried rosemary
Directions:
Grease the inner pot with two tablespoons of olive oil and press the ‘’Saute’’ button. Heat up and add spring onions and coriander seeds. Cook for 2-3 minutes and then add the meat.
Pour in 5-6 cups of water and add bay leaves. Seal the lid. Set the steam release handle to the ‘’Sealing’’ position and press the ‘’Meat’’ button.
Cook for 25 minutes on high pressure.
When done, release the pressure naturally and open the lid. Remove the meat from the pot and chill for a while.
Preheat the oven to 450 degrees F. Grease a baking sheet with the remaining oil and set aside.
Rub the meat with sage and rosemary and place on a baking sheet. Pour in about one cup of water.
Place in the oven and reduce the heat to 400. Roast for 20 minutes.
