Portobello Pork Butt

1 lb pork butt
2 garlic cloves, crushed
1 cup Portobello mushrooms, sliced
½ cup dried shiitake
4 tbsp soy sauce
3 tbsp oil
2 tbsp apple cider vinegar
2 tsp stevia powder
1 tsp salt
1 tsp turmeric powder
Place the meat on a cutting board and cut 2-inch long strips. Set aside.
Place shiitake in a bowl and pour in enough water to cover. Soak for 10-15 minutes. Drain and set aside.
Plug in the instant pot and heat the oil. Add the meat and season with salt, turmeric, and stevia. Stir well and cook for 10 minutes.
Stir in Portobello mushrooms, soaked shiitake, and garlic. Continue to cook for 7-8 minutes, stirring constantly.
Finally, pour in the soy sauce and give it a good stir. Continue to cook for another 5 minutes. If necessary, add about 2-3 tablespoons of water.
Press the ‘’Cancel’’ button and serve immediately.
